by old and young alike . Soups which are delicacy especially during the chilly month of winter , when people like to warm themselves up with a nice , steamy bowl of soup .
Chinese soups like the Hot and sour soup , Mushroom soup , Fish vegetable and Chicken corn soup & Noodle soup are widely popular among Pakistani denizens .
Let's get started with Hot and sour soup :
Ingredients :
- Chicken :1/2 kg
- Water : 8 glasses
- Corn flour : 5 tablespoons
- Soya sauce : 3 tablespoons
- Chilli sauce : 2 tablespoons
- Vinegar : 2 tablespoons
- Ketchup or tomato paste : 4 tablespoons
- Eggs : 2
- Sugar : 1teaspoon
- Ground black pepper : 1 teaspoon
- Ground red chili : 1 teaspoon
- Thin chopped cabbage : 2 tablespoons
- Thin chopped carrots : 3 tablespoons
- Onion : 1 medium
- Black peppercorns : 6 to 8
- Boiled prawns : 6 to 8 cut
- Thin chopped capsicums : 2 tablespoons
Method to cook :
- Add chicken , whole onion , 6 to 8 black peppercorns into 8 glass water and boil . When stock(yakhni) is reduced to 6 glasses , turn the stove ( gas or chulha ) off .
- Now take chicken out of stock ( yakhni) and make its fragments ( tukrey) and dispose off bones.
- Sift the stock ( yakhni )and place on the stove ( gas ) . Add salt , Chinese salt , ground black pepper and red chili . When it gets boiled , mix corn flour in half mug water and add into the stock ( yakhni ) and cook for 5 minutes .
- When stock (yakhni) becomes thick , add soya sauce , chili sauce , vinegar & tomato paste or ketchup and also chicken .
- Now add the beaten eggs ; remember that do not move the ladle (chamach) immediately after adding the eggs . Doing this breaks the eggs into very thin pieces so move the ladle after two minutes so that you get proper pieces of eggs .
- Lastly add carrots , capsicums , cabbage , green onions and prawns if you like and place on dun for 5 to 8 minutes . And so your hot and sour soup is ready .
